Blackened Tuna

*Blackened Tuna steaks are awesome! This is a fun and easy meal to prepare if you love to cook on the grill.
Ingredients
  • tuna
  • Blackened Redfish Magic® seasoning
  • butter
Directions
Preheat outdoor grill on high with a cast iron skillet on the rack.
Season the tuna with Blackened Redfish Magic®, then add a tablespoon of butter to the hot skillet.
Immediately add the tuna and close the lid. Turn once after about 2-3 minutes. The tuna cooks quickly, and is very good when it is prepared medium rare.
Serve with favorite vegetables – which could be prepared on the grill with this recipe.


Blackened Salmon Salad

Blackened Salmon can be served many ways. Follow these directions to prepare the salmon and serve on a bed of lettuce garnished with tomato.

Ingredients

  • 1 lb Salmon
  • Heinz Chili Sauce
  • fresh lettuce
  • ripe tomato
  • brie or fresh mozzarella

Directions

Place Salmon in a baking dish and generously brush on Heinz Chili Sauce. Bake in oven for about 20 minutes on 350 degrees. Serve on bed of lettuce with tomato slices and a slice or two of your favorite cheese.

Baked Yellowtail Snapper

*Yellowtail Snapper is very popular in South Florida so you are sure to catch one of these.

Ingredients

  • Yellowtail Snapper
  • Portabella Mushrooms
  • Onion
  • Garlic
  • Chef Paul Prudhomme’s Blackened Redfish Magic Seasoning

Directions

Sauté mushrooms, onion and garlic with olive oil. Place filleted fish on baking dish
then put mushroom mixture on top. Roll up and lightly sprinkle seasoning on top.
Bake in oven for 10-12 minutes. Serve with your favorite vegetables.
